Field-to-Fork Food Experience at Los Poblanos’ Campo Restaurant

Los Poblanos Historic Inn and Organic Farm offers guests the very highest quality gourmet yet casual dining, not to mention a menu teeming with local ingredients some of which are grown right on site.  The cuisine is aptly called Rio Grande Valley Cuisine, and one of the highlights is the connection it has with the agricultural history of the North Valley.  With the opening of Los Poblanos’ new restaurant:  Campo, you’ll enjoy one of the finest field-to-fork dining experiences in an innovative and open kitchen setting.

Many food items are sourced right on site from the farm’s organic garden herb garden, and honey beehives, and you’ll never taste fresher ingredients.  Fresh herbs adorn every dish, and heirloom and native varietals bring out the flavors of what the culinary team calls Rio Grande Valley Cuisine.  The use of local varieties creates a sustainable approach to farming and connecting with the land, and many of the yearly crops are even considered endangered.  Some crops that you are likely to see include:  heirloom beets, kale, fava beans, rhubarb, Chimayo chiles, casaba melons, among many others.  And just as the seasons change and harvest transitions, so do the menus at Campo.  Expect to see a menu that is deeply rooted with each season’s bounty and a connection to the growers and producers.

Expect to indulge as you wake to a full breakfast menu featuring both fresh classics such as the field omelets with fresh herbs and a selection of in season vegetables from the garden, smoothie bowl with fresh seasonal fruit and also New Mexico specials like chilaquiles and blue corn pancakes that had us at the very first bite.  Fresh juices, teas, further accompany breakfast and of course some lavender infused beverages.

Of course dinner is no less spectacular and features heirloom tomato salad, mole verde adorned with local seasonal vegetables, and potato gnocchi with local green chile.  And don’t forget to save room for dessert as the Los Poblanos lavender honey cake has our hearts melting and of course lavender takes center stage in such creatively inspired offerings.

 

When you join us this spring you will have the opportunity to learn some of these fresh and vibrant dishes yourself, as we take part in our own private cooking class led by one of Los Poblanos culinary team.  You will be guided through the sourcing of local ingredients, the preparation process, and a full tasting.  And you’ll have the ability to ask all of your cooking questions.
